Ingredients to make 3 gallons
- 2 ¼ pounds of raisins
- 3 ¾ pounds long grain unflavored rice
- 7 ½ pounds sugar
- 2 tablespoons acid blend
- 2 ounces yeast nutrient
- 1 package yeast
- 3 gallons of water
- 3/8 teaspoon potassium sorbate
- 3/4 teaspoon potassium metabisulphite
Directions
- Heat 1 gallon of water and dissolve the sugar
- Pour into a primary fermenter
- Allow to cool and pour over the rice and raisins (do not chop or mince the raisins)
- Add the acid blend and remaining water
- Stir in the yeast nutrient
- Pitch the yeast
- Once the fermentation has started, stir the must daily
- When the specific gravity is down to 1.01, rack into a 3 gallon carboy
- Fit an air-lock on the carboy
- Let sit for 7 days.
- Check the specific gravity. When it is 1.00 or less, rack and leave any sediment behind.
- Add the potassium sorbate and potassium metabisulphite.
- After 7 to 10 days, rack again leaving the sediment behind
- Let sit for about a month then filter if desired.
- Bottle in 2 to 3 months
