all bummed out about my kit - 2007/11/29 19:06 So... I made a cab. kit it was a vino del vida. I followed insturctiond to a T and it turned out great I ended with 21 bottles. It tasted great I was so impressed, i gave 2 bottles to a friend he drank one bottle that day and called me to say it was great. I also gave a bottle to my cuz she also loved it. This is were it gets bad, I opened a bottle on thanksgiving with my cuz and wife it was terrible it almost tasted sour. So I called my friend and asked him to taste his bottle he had left it was bad so my wife and I tasted a bottle and it too was bad

WHAT DID I DO ? oh i bottled it in september like the first week not sure exact date as I am in class and I do not have my wine log in front of me. A friend seems to think maybe it is still developing but I'm not sure, but I am looking for guidance.

Your wine could have a lactic acid bacterial infection which soured the wine

or

It could also be cork taint. Did you soak your corks in metabisulfite before your bottled?

Re:all bummed out about my kit - 2007/12/04 18:38 i did not soak them in mbs, but i did soak them in a Sterile solution. it was a kit wine and i was very careful; i thought i cleansed everything. oh well hope my chambourcin turns out (now i am nervous) but i will not bottle until march however i do have a rack coming up in a couple weeks!
